Veggie Lo Mein Recipe


Not really in the mood for meat, or a vegetarian?  This is the perfect recipe for you.


Ingredients:

8 oz. Spaghetti, uncooked

1/4 Cup Vegetable Oil

1 Cup Carrots, shredded

1/2 Cup Red Bell Peppers, sliced

2 Cups fresh Mushrooms, sliced

2 Garlic Cloves, minced

1 Onion, chopped

1/2 Cup Green Onions, chopped

2 Cups fresh Bean Sprouts

1 Tbsp. Cornstarch

1 Cup Chicken Broth

1 Tbsp. Soy Sauce

2 Tbsp. Honey

1/4 Cup Hoisin Sauce

1/4 tsp. Cayenne Pepper

1/4 tsp. Curry Powder

1 tsp. fresh Ginger, grated


Directions:

Boil water, lightly salted, and add the pasta, cooking for 8 to 10 minutes, then drain.


In a wok, heat the oil, and add the carrots, peppers, mushrooms, garlic and onion stir-frying until tender.  Then add the green onions and bean sprouts, and cook for a minute.


In a small bowl, mix the chicken broth and cornstarch, and add to the stir-fry.


Add in the soy sauce, honey, hoisin sauce, cayenne pepper, curry powder, and ginger, and cook until thickened and bubbly.


Add in the cooked spaghetti, and toss until mixed.
