Veggie Fried Rice Recipe


This is a great vegetarian fried rice recipe.


Ingredients:

3 Tbsp. Soy Sauce

1/2 Cup Vegetable Broth

2 tsp. Sesame Oil

1 Tbsp. Ginger Root, minced

3 Garlic Cloves, minced

1 Cup Broccoli Florets

1 Cup Carrots, sliced diagonally

1 Cup Celery, sliced diagonally

1 1/2 Cups Bean Sprouts

1 Cup Mushrooms, sliced

4 Cups Rice, cooked (white or brown)


Directions:

In a small bowl, mix together the soy sauce and broth.


Heat oil until hot in a wok.  Add the ginger and garlic and stir-fry for 1 minute.


Add the broccoli and carrots, and continue to stir-fry for 3 minutes over medium heat.


Add the celery and stir-fry for 2 minutes, then add the sprouts and mushrooms for another 1 minute.


Add the rice and broth mixture and continue to stir-fry until the rice is thoroughly heated.


Yield:  4 servings
