Hunan Shrimp Recipe

Spicy shrimp is not an oxymoron.

Ingredients:

2 lbs. Shrimp

2 Tbsp. Light Soy Sauce

1 Tbsp. Sherry

1 Tbsp. Ginger, shredded

3 small Hot Chile Peppers, cut in 1” pieces

1 Scallion, cut in 1” pieces

3 to 4 Tbsp. Oil

1/2 Cup Chicken Broth

1 Tbsp. Light Soy Sauce

2 Tbsp. Wine Vinegar

1 Tbsp. Sugar

1/2 tsp. Salt

1 to 2 tsp. Anise Pepper, ground to powder

1 Tbsp. Cornstarch

Directions:

Marinate the shrimp with the soy sauce, sherry, and ginger mixture for 15 to 20 minutes.

Mix the soy sauce, chicken broth, wine vinegar, sugar, salt, and pepper.

In a wok, heat the oil, and stir-fry the scallions and hot peppers for a minute.  Then add the marinate and shrimp to the scallions and peppers for 2 more minutes.  Add the chicken broth mixture and make sure to mix well.  Cook on low heat, until the shrimp is pinked.

Add the cornstarch to thicken the sauce, and serve over rice.

And Enjoy!
