Cashew Shrimp Recipe


This is such a great recipe; the cashews make all the difference.


Ingredients:

2 Tbsp. Snow Peas

1 lb. Shrimp, shelled and deveined

Pinch of Sea Salt

1 tsp. Dry Sherry

1/4 tsp. Ginger Powder

1/4 tsp. Garlic Powder

1/2 Egg White

1 Tbsp. Cornstarch

2 Tbsp. Peanut Oil

1 whole Garlic, pressed

2 oz. Unsalted Cashews

1 1/2 tsp. Salt

Dash of Sugar or Honey

1 Tbsp. Dry Sherry


Directions:

Bring 2 cups of water and 1 tsp. of salt to a rapid boil in a small saucepan.  And the peas and boil for 3 minutes then drain immediately.


Wash the ready shrimp in salted water, and add them to a medium bowl with 1 tsp. of dry sherry and ginger.  Sprinkle lightly with garlic powder and stir in the egg white and cornstarch.


Heat 2 Tbsp. of peanut oil to a wok, add the shrimp an cook until the color changes, and add the pressed garlic, cashews, snow peas, salt, sugar, and sherry.


Stir-fry over high heat for another minute and serve.
